ROAST CHICKEN WITH LEMON, ORANGE & GINGER

 

Ingredients:

 

1 roasting chicken

Grated zest of 1 lemon, then cut into quarters

Grated zest of 1 orange, then cut into quarters

3 tbsp grated fresh ginger

Salt and ground black pepper

30g melted butter

5 tbsp fresh lemon juice

50ml fresh orange juice

3 tbsp honey

Method:

  1. Take 1 quarter of the lemon and rub the outside and cavity of the chicken.
  2. Mix grated zest of lemon and orange, and grated ginger. Rub the skin and cavity of chicken with this mixture. Season with salt and pepper.
  3. Put the lemon and orange quarters inside the chicken and marinade overnight in the refrigerator.
  4. Place the chicken in a roasting pan. Combine melted butter, honey and the citrus juices. Mix well.
  5. Roast chicken in 200-220 degC preheated oven for 1.5 hours. basting with the juice mixture a few times during roasting.
  6. Transfer to a serving plate and rest for 15 minutes. Reserve the gravy. Carve the chicken and serve with the citrus gravy.

 

Notes:

  1. I feel the citrus juice is too much, resulting a wet chicken which skin is hard to brown and crisp. This prolongs the roasting time too. Please readjust/ reduce the amount of juices. Maintain the amount of honey.
