CHICKEN CUBES IN HOISIN SAUCE

Ingredients:

 

300g chicken breast, cubed

1 red pepper

1 green pepper

3 garlic cloves, chopped finely

3 tbsp cooing oil

 

 

Marinade:

2 tbsp light soy sauce

1 tbsp corn flour

Dash of pepper

 

 

Seasoning:

50ml water

2 tbsp hoisin sauce

1 tbsp oyster sauce

1 tsp Shaoxing wine

Pinch of salt

 

 

 

 

Method:

  1. A day before serving the dish, marinate cubed chicken breast with the marinating ingredients. Chill in fridge.

  2. Cut the peppers in half and scrape out the seeds and pale membrane. Cut into large pieces.

  3. In a wok, heat the oil on high heat. Stir in the chopped garlic and stir-fry until fragrant. Add the marinated chicken and continue to fry until meat is half cook. Add the peppers.

  4. Season the dish with the seasoning ingredients. Cover the wok and let it simmer for 2-3 minutes until gravy thickens.

  5. Taste and add more salt if required.

  6. Dish out and serve hot.
