CORN PANCAKES

Ingredients:

Makes 15

 

240g corn kernels

6-8 spring onions, finely chopped

3 tbsp flour

2 tsp meat curry powder

1 tbsp chopped garlic

1.5 tsp fish sauce

1 tsp soy sauce

1 egg

Oil for frying
 

 

 

Method:

  1. Combine all ingredients and seasoning in a bowl. Mix well.

  2. Chill for 1 hour to firm up the mixture.

  3. Heat oil oil in a frying pan. Drop a tablespoon of mixture in to the pan to make thin round pancake. Fry at medium heat till both sides are golden brown.

  4. Serve hot as snack or with rice.
