STEAMED PUMPKIN CAKE

INGREDIENTS:

    40g dried shrimp, soaked and chopped

    2 nos. Chinese sausages

    5 cloves garlic, chopped

    6 shallots, chopped

    480g pumpkin flesh, shredded

    4 tbsp oil, for frying

 

Batter:

    250g rice flour

    50g tapioca flour

    800ml water

 

Seasoning:

    1 tsp salt

    Dash of pepper

 

 

METHOD:

 

  1. To prepare batter, blend rice flour and tapioca flour in a mixing bowl. Add water and stir well.

  2. Prepare all ingredients. Heat up oil in a pan/wok. Fry chopped garlic and shallots until fragrant.

  3. Add dried shrimp and sausages. Continue to fry until fragrant. Then, add in shredded pumpkin and fry until pumpkin softens.

  4. Gradually stir the batter prepared in Step 1 into the fried ingredients. Season with salt and pepper. Cook until batter thickens.

  5. Place the thick batter into a lightly greased 8" square pan. Steam at high fire for 45 minutes.

  6. Remove from steamer. Leave to cool completely before start slicing.
