PANDAN DURIAN JELLY MOONCAKES

INGREDIENTS:

Makes 4

 

Mock duck egg yolks:

    150ml carrot juice

    50g castor sugar

    3/4 tsp agar-agar powder

    1/2 tbsp evaporated milk

 

Filling:

    50g durian flesh

    100ml water

    50g coconut milk

    100ml evaporated milk

    1 tbsp agar-agar powder

    A pinch of salt

 

Skin:       

    340g water

    2-3 pandan leaves

    1/8 tsp pandan paste (optional)

    45ml coconut milk

    1 1/2 tbsp condensed milk

    1 1/2 tbsp agar-agar powder

    30g castor sugar       

 

   

 

METHOD:

  1. To prepare mock duck egg yolks: Combine carrot juice, castor sugar and agar-agar powder in a pan and bring to boil. Remove from fire and stir evaporated milk in. Set aside to cool slightly. Pour solution to the brim of the lower case of an ice tray (Pic. 1). Cover with the upper case. Allow to cool at room temperature for 30 minutes. Refrigerate for an hour. When yolks have set, de-mould and set aside for later use (Pic. 2).

  2. To prepare filling: Puree durian with water in a blender.  Combine durian puree with the rest of the ingredients in a pan (Pic. 3). Heat up mixture until it starts to bubble. Remove from heat and set aside to cool slightly. Divide durian filling into 4 nos. of 8cm plastic containers (Pic. 4, Note 1). When the filling thickens, drop one or two mock yolks in the centre of filling (Pic. 5). Allow to set before refrigerating for another 1 hour.

  3. To prepare skin: Blend pandan leaves with water in a blender. Strain into a pan to discard pulp. Add the rest of the ingredients and heat up mixture until it starts to bubble (Pic. 6). Remove from heat and set aside to cool slightly.

  4. Pour some solution into mooncake moulds as shown in Pic. 7.  Place prepared durian filling in the centre of the mould. Top up with remaining solution (Pic. 8). Allow to set before refrigerating for another 1 hour.

  5. Remove jelly mooncakes from moulds and keep refrigerated until ready to serve.

NOTE:

  1. Make sure the height of your filling is about 85-90% of the height of your mooncake mould.

  2. All jelly solutions in this recipes thickens considerably fast. Please be alert on the right timing, particularly when dropping mock yolks in the filling, and when placing filling in the skin solution.
