PALM SUGAR FATT KOH

Notes:

  1. I used 90g brown sugar and 140g palm sugar. The fatt koh is still sweet to me. Suggest to reduce another 15-20g sugar.

  2. Used 5 pandan leaves for more fragrance.

  3. Tips: Patty tins used for making fatt koh - The height must be greater than the diameter. Choose mould which top diameter isn't much wider than the base diameter. This is to ensure proper rising and 'smiling' fatt kohs.

  4. I stirred in palm syrup and coconut milk before adding flour, and not the other way round as suggested by the recipe. Adding flour first before the liquid yields a dry batter which is difficult to mix (like mixing bread dough).

  5. This recipe makes approx. 14 fatt kohs.
