DRAGON COOKIES (LOONG PENG)

 

Ingredients:

 

150g butter
80-90g icing sugar
350g cornflour
20g all purpose flour
1 tbsp + 1.5 tsp milk powder
3 egg yolks
1 whole egg + 1/2 tsp vanilla essence (optional)
2 tbsp UHT/ fresh milk

 

 

 

Method:

  1. Sift cornflour, all purpose flour and milk powder into a bowl. Set aside.

  2. Sift icing sugar into a mixing bowl. Add butter and beat on medium speed until light and fluffy.

  3. Add yolks one by one, beating well after each. Add in the 1 whole egg, vanilla essence and UHT milk. Mix to incorporate well.

  4. Fold in dry ingredients in (1) and mix until a soft dough is formed.

  5. Put dough into a piping bag. Using a star nozzle, pipe out an "S" shape. Dot the eyes red.

  6. Bake in preheated oven at 180 degC for 15-20 minutes. DO NOT bake till brown. The cookies are suppsoed to be white or yellowish.

  7. Remove from oven and cool on wire racks. Store in air tight container.
